I’m not sure if this is too integrated to look at or not, but is there a way to disable / prevent the theme from using any Google Fonts, and instead use something hosted locally? I’m mainly looking at speed optimization, and most of my late loads on my waterfall chart are Google Fonts.

For sure. You might want to check out this child theme:
https://purothemes.com/wp-content/uploads/2015/12/ultra-child-willy-021.zip
If you check the functions.php file of this child you’ll see we’re removing FlexSlider and FontAwesome and then adding back in a slimmed down version of FontAwesome. We’re also removing both Google Fonts. If you want me to assist in working these changes in your child theme, please, ZIP your child theme folder and upload to any public location like your WordPress Media Library and then send me the link.

Please, find your updated child theme here: https://purothemes.com/wp-content/uploads/2016/03/ultra-child-dan-01.zip. You can removed your current child theme and add this one instead and everything should be fine.
